The purpose of this Virtual Special Issue of the Carbohydrate Polymers journal is to collect scientific contributions from authors who participated to the 8th EPNOE International Polysaccharide conference. The event will take place from 17th to 22nd September, 2023 at Graz University of Technology, Austria. Original research articles as well as review articles are welcome.

All researchers who are presenting at the 8th EPNOE event are invited to submit their paper to the issue.
